Don't let the picture trick you, they look delicious!
Many people rave about this place and I had never been. I mean they did have a flood and had to rebuild a lot after the water damage. I never went before they had their damage and only went after they cleaned the place up and was asked to go to try the wings from their sister restaurant Founding Famers, via twitter. They only offer one type of wing and when you offer one type it is typically because it is perfect and just decadent. The wing offered at Farmers Fishers and Bakers is a crispy duck fat chicken wing. Duck fat is rich and flavorful so I was very excited when told that this was on the menu and was eager to order and have them arrive. If only my decadent expectations and flavorful taste would have been fulfilled would I have been happy. This wing had such potential and was such a failure.
When the wings finally came out, after such slow service, they were cold, dry and the mustard smear on the plate (served as the sauce to cut the rich duck fat) was dried out. Now if you put mustard on your plate in a fancy smear and it dries out it typically means that mustard has been sitting there. I am not saying they served us someone else’s rejected wings but they may have brought us wings that were sitting under a heating lamp in the kitchen which dried out the wings meat and also crusted up the mustard. The wings did have a crispy texture from being fried in the fat and the skin, of the wings that were warm, had a decent flavor, but the dryness of the overcooked meat was bland. The outside flavor of the fried skin tasted of something that resembled a mix of chili pepper and white pepper mixed together but not so intense that is was spicy.
I was very displeased with the service at this establishment and had such high hopes for the duck fat wings. I would like to go back because I really feel these could be delicious and it was a bad day for the kitchen and they can redeem themselves, however at this time they are rated at NEVER AGAIN
