Annually I attend the Beer, Bourbon & BBQ festival held at the National Harbor. How can I not attend when two of my very favorite things in life are present: Whiskey and Pork! This year’s festival was better than last year’s festival because I found there to be more tasting and testing’s of all sorts of goodies. I am always on the lookout for a good tasting, full bodied hot sauce that will vamp up my chicken wings. While on my way to find Clay, and most likely scold/yell at him for something he was at a hot sauce booth, Hot Sauce Home. The owner, John, was talking to Clay as Clay was telling him about my wing blog. John was glad to hear there was someone attending the festival who was into chicken wings and hot sauce and decided to give me a bottle of his “Rippin Red Wing Sauce HOT!” and “Rippin Red Wing Sauce Original”. He had the sauce there for sale and to taste by the spoonful. Clay and I both tried the sauce there and I fell in love. I decided to cook both sauces on some chicken wings with a about a 2 dozen people so everyone would be able to try the sauce. The wings were cooked in batches so we knew which were HOT and which were original. (We didn’t need to cook them in batches though you could tell by tasting them!) The sauce is awesome! It is a thick sauce that stays on the wings when cooking, I marinated the wings overnight and the sauce still was thick in the morning when we cooked them on the grill. I like a hot sauce that is not watery. The sauce also has little pieces of garlic, I presume, in it that brings some great heat along with flavor. I also love this sauce because it is very versatile and can match up with other meats and vegetables too. I tried the sauce to see if it would pair with a pork loin as a topper, along with steak as a sauce and with broccoli to cover the taste and it was phenomenal with all three. If you like spicy hot sauce I would say go with the Rippin Hot wing sauce HOT, if you want a more mild version still with flavor and slight kick to the sauce go with the Original sauce.
